Before I found this recipe, I wanted something that felt like a snack but wouldn’t leave me feeling guilty afterwards. I tried it and the result was soft, fluffy egg rolls that tasted much better than I expected.
If you’re trying to eat healthier, lose weight, or simply want a high-protein snack, here’s how to make them.
Ingredients
-220g sweet potato, cooked and mashed
-3 egg whites
-1 tablespoon melted butter
-1 tablespoon vanilla extract
- ½ cup oat fiber
-4 tablespoons Truvia or any calorie-free sweetener
-¼ teaspoon baking soda
-1 tablespoon baking powder
- 1 teaspoon xanthan gum (or psyllium husk as an alternative)
- Egg white for brushing
-Low-calorie olive oil spray
How to Make It
1. Mash the sweet potato until smooth. A food processor makes this easier if you have one.
2. Add the egg whites, melted butter, vanilla extract, oat fiber, sweetener, baking soda, and baking powder.
3. Mix everything well.
4. If the mixture feels too loose, add the xanthan gum and mix again until it thickens. Psyllium husk can also work if you don’t have xanthan gum.
5. Divide the dough into four equal portions.
6. Shape each portion into an egg roll.
7. Line a baking tray with parchment paper and lightly spray it with low-calorie olive oil spray.
8. Place the rolls on the tray and brush each one with egg white for a smooth finish.
9. Bake until golden and fluffy.
Why Use Oat Fiber Instead of Regular Oats?
This recipe uses oat fiber, not regular oats.
They’re often confused, but they’re quite different.
-Oat fiber: about 190 calories per 100g, very high in fibre and much lower in digestible carbohydrates.
-Regular oats: about 380 calories per 100g.
Because oat fiber is high in fibre and lower in calories, it’s a popular ingredient in many weight-loss and diabetes-friendly recipes.
