As an Ibibio girl from Akwa Ibom, this isn't just food to me. It's culture wrapped in cocoyam leaves, tradition passed from one generation to another, and the kind of meal that reminds you where you come from.
Preparing Ekpang Nkukwo isn't something you rush.
Fresh cocoyam is grated, carefully wrapped in tender cocoyam leaves, then simmered in a rich palm oil sauce with fish, crayfish, periwinkle, and local spices.
It takes time, patience, and love, and somehow, you can taste all three in every bite.
For me, it's more than a delicacy. It's the taste of family gatherings, laughter around the table, and memories that never gets old
