If your Jollof rice doesn’t have crayfish, are you even Nigerian?

I know, I know. Some people will clutch their pearls and call it “non-traditional” or “ruining the Jollof.” But let’s be honest, crayfish is the secret weapon. 
That tiny, dried, ground crustacean adds a depth, a smoky flavor, and that oomph your peppers and tomatoes alone can’t deliver. 

It’s subtle, it’s powerful, and Nigerians have been using it in stews and soups for generations so why not in Jollof?

Some people argue that If you add crayfish, it becomes stew rice. To that, I say nuance matters. Jollof has layers of flavor, and crayfish is one of them. Fry your peppers, add the crayfish, and tell me your Jollof doesn’t hit differently.

Everyone has a version they grew up with, and every family will swear theirs is the “correct” way. But denying crayfish in Jollof? That’s just flavor terrorism.
